Leading with Taste Workshops that investigate ingredients, there is also a Chef's Table program where you dine with some of Sydney's top chefs, learn their secrets and enjoy their passion.
Residential schools and culinary tours overseas are planned for the near future.

New Concept 'Taste Workshops'

This ambitious and innovative programme explores in-depth 'real food' taste differences in an intelligent and memorable way.

The essence of these workshops is to give you the opportunity to fully explore a specific product group in each session, learning about the growing/farming/ production of that product; experiencing the taste, texture and flavour, and determining the differences in flavour of differently produced, but similar products.

Key issues of seasonality and the optimum eating time will form a vital part of every discussion. After the presentation it will be time to enjoy some conviviality as we eat a light meal and enjoy an appropriate glass of wine together. Numbers are limited at each session to allow open and in-depth discussion and questions.


'Chef's Table' Programme

Dine with some of Sydney's most significant chefs and gain a real understanding of their particular approach to gastronomy. Understand more why these talented professionals have made such a mark on the food scene as we know it in Sydney today. It will be a way of gaining an insight into their philosophical approach to food - their cooking style, their convictions, their personality.

In each instance, you will be sitting at either lunch or dinner with the chef in a private area - and the meal prepared for you will be chosen specifically for the occasion together with selected wines to complement each meal chosen by gifted sommeliers.

* Dine in the kitchen of one of our CBD restaurants while the chefs go about the preparation and presentation of the meals for the restaurant. Observe the organization as everyone in the kitchen plays his/her special part in bringing you your meal. This is a very special experience and can be arranged for groups of 10-12.

*Convivial Times also organizes national and international gastronomic adventure tours. Travel with us as Armando Percuoco of Ristorante Buon Ricordo shows us his Italy, through France, come with us to the stunning northern area of Spain, or on a magnificent short break at some other destination in Spain. Travel to China with Professor Stephen Fitzgerald for a cultural and culinary awakening (September 2004). In Australia, we have tours scheduled to Tasmania and can take you the Wineries of South Australia, Mudgee and the Hunter Valley - we can make it happen!


*Perhaps you are in the food industry and are looking for some different education programs for your staff or your clients. Our Taste Workshops are sensational in "educating" even the most knowledgeable "foodie". The topic could be fish, game - feathered or otherwise, local and/or international cheeses, coffee or oils or anything else you nominate, and our new food/wine matching workshops are proving highly successful. An industry expert will always present the topic, discuss the buying, preparation, storage, cooking, wine matching etc., and we suggest the workshop be concluded with a light meal. Oh, and this doesn't have to be limited to the food industry - this is the type of knowledge that could benefit any young (or not so young) executive.
